The Tom Collins is one of the oldest cocktails in the book - quite literally - with its first recorded reference written in “The Bartender’s Guide”, published in 1876!
This recipe puts an elderflower twist on the original making it an 'Elderflower Collins' which showcases bright citrus notes with a bold floral backbone from the elderflower liqueur.
This is a great drink to sip on a hot day, and is best enjoyed shared with whomever is lucky enough to be your designated 'bubble' friend.

INGREDIENTS

Gordon's dry gin - 40% - 50ml

St Germain Liqueur - 20% - 25ml

Elderflower Syrup - 12.5ml

Soda water - 150ml
-
Juice of 1/2 lemon,
-
Lemon wheel to garnish
METHOD
Recommended Glassware: Wine Glass
Add ice to the glass to chill.
Add 50ml of Gin & 25ml of St Germain Elderflower liqueur
and the juice of half a lemon into a cocktail shaker or jug.
Shake or stir until mixed thoroughly (add 12.5ml of the elderflower syrup if you prefer it sweeter), top with 1 full
can of soda (pre chilled in the fridge), and garnish
with a wheel of dried lemon.
