The Tom Collins is one of the oldest cocktails in the book - quite literally - with its first recorded reference written in “The Bartender’s Guide”, published in 1876!

 

This recipe uses the original as a guideline but explores our love of all things Sussex by using Sussex made gin and soda water, as well as adding Sussex vermouth to impart flavours reminiscent of a Sussex vineyard.

 

The Sussex Collins is designed to be enjoyed by cocktail newbies and connoisseurs alike, using only the best quality local products, without skimping on the measure. A few of these and you'll be struggling to see the way to Barnard Castle.

FUSS FREE COCKTAILS

INGREDIENTS

  • Slake Sussex gin - 41% - 50ml

  • Albourne Vermouth - 18% - 25ml

  • Elderflower cordial - 50ml

  • Folkingtons Soda Water -125ml

  • Juice of 1/2 lemon

  • Dried lemon wheel to garnish

METHOD

Recommended Glassware: Large wine glass

Generously fill the glass with ice

In a cocktail shaker or mixing jug add 50ml of Slake Sussex Gin and 25ml of Albourne Estate Sussex Vermouth and 50ml of elderflower syrup (or 25ml if you prefer it drier).

Add in a hand full of ice, and the juice of 1/2 of a lemon.

Shake or stir the liquid in your vessel respectively until thoroughly mixed and pour into your glass, leaving the spent ice behind in the mixing vessel.

 

Garnish with a dried wheel of lemon, and top up with Folkingtons Sussex soda water served cold from the fridge & enjoy!
